Detoxing Carrot Ginger Soup

This is one of my newest recipes and although it was not “next” in the posting list, it turned out too good not to share.  I often discuss the importance of ensuring you keep internal inflammation as low as possible, and this soup assists in the process.  Ginger, garlic and turmeric rank highest in herbal remedies to help fight inflammation, and carrots are highly alkalizing which help flush toxins from your liver.  Keeping your liver healthy means you have more energy, less digestive disruptions and constipation, as well as fewer headaches.  As stated by think of your liver as a washing machine.  All the other organs in your body take their dirty laundry to your liver to get it cleaned because it’s the only laundromat in town.  If you are neglecting your liver by consuming large quantities of alcohol, processed foods and high sugar beverages, you may feel sluggish, irritable and just plain awful.  So, this yummy soup can work wonders on your insides and all you have to do is take a few minutes to prepare it and enjoy the great flavors.

One of my lifelong college friends tastes most of my recipes prior to posting, and this one was no exception.  When she tasted this soup, her first question was “what type of cream did you use?”  To her surprise, NONE.  My secret ingredient for the wonderful creaminess is red potatoes.  The small amount of starch produces a perfect creamy texture that is very pleasing to the palate.  I hope you enjoy!


Detoxing Carrot Ginger Soup

5 large carrots – peeled

3 medium red potatoes – peeled

1 TBSP fresh ginger – finely chopped

2 cloves fresh garlic – chopped

1 tsp turmeric

1 tsp celtic sea salt

1/2 tsp white or black pepper – white pepper is hotter

drizzle of extra virgin olive oil

1 cup low sodium vegetable broth

Steam carrots until tender.  Boil potatoes until tender.  In a high-powered blender or food processor, place all ingredients and blend until creamy.  Serve warm.
