I can remember being in High School and having a “snack bar” available for purchasing junk food for lunch. Everyday I would buy a 2-pack Reese’s and a bag of chips. Done. Lunch. I have to admit that pretty much makes me cringe just to write it. Yes, I used to be a junk food junkie. There I said it. So, how does that person turn into the person I am today? Many years of feeling terrible. My body was unhappy with everything I put in it. And I had had enough. I made the changes necessary to ensure I would never go back there again. And, I haven’t.
All that leads me to tell you I am still a lover of chocolate. I just adopted the motto that “if I am going to partake, it better be good for me.” I had lunch with a lifetime friend this week and she sparked my memory of healthy peanut butter cups. I had made these or something similar to them in the past, but hadn’t written down the recipe. So after my kids went to bed, I began pulling all sorts of things out of the pantry and came up with this very yummy, very healthy homemade peanut butter cup. My oldest son ate one and proclaimed “win”! I will put my usual disclaimer of not condoning eating all of these at once, although I am tempted. Enjoy!
Superfood Peanut Butter Cups
2 cups peanut butter (5g or less sugar per serving)
5 TBSP raw cacao
3 TBSP raw local honey
2 TBSP coconut oil
Line a small muffin tin with muffin liners. In a bowl mix together all ingredients until well incorporated. With a small ice cream scoop or spoon, scoop mixture into each muffin tin liner. Place in the refrigerator. For best results, keep any leftovers in the fridge. With the use of coconut oil, they will melt quickly outside the fridge.
