Summer is quickly coming to a close. We have been making all kinds of yummy ice cream over the past few months, and I really felt compelled to share at least one recipe with you. I say only one, as this particular one got a “thumbs up” from both of my children. Now, as you have come to know, I only eat foods that have some form of nutritional value, so this recipe is no different. I began with a base of organic frozen strawberries and added a scoop of chia seeds to make this indulgence even more clean and healthy. There should be no hesitation when requests for “seconds” come your way. Even though the end of summer is drawing near and the hectic schedules will soon be upon us, take the last few days and enjoy ice cream with your family.
Superfood Strawberry Ice Cream
2 cups frozen organic strawberries
1 TBSP raw unsweetened coconut
1 TBSP chia seeds
1 cup full fat coconut milk
1 TBSP maple syrup
Place all ingredients into blender and blend until creamy. Place leftovers in freezer safe container and freeze. When ready to use frozen ice cream, remove from the freezer and let sit at room temperature for approximately 20-30 minutes. You may want to re-blend the frozen ice cream to get the original creamy consistency again.
