I am so sad to say, this dish represents the last of our summer tomatoes. We had a short tomato season as our area has had unbelievable amounts of rain. When picking these final beauties, I knew exactly how I would share them with you. Slow roasting tomatoes have to be one of my families favorite summer dishes. When preparing these, your home will become exceptionally fragrant, as though you stepped into a quaint little restaurant on the side of the Mediterranean. I feel strongly about the use of garlic in most of my dishes, and this one is no exception. But, should you not “love” garlic as I do, just cut back on the amount of cloves you use. The most important step in this whole process is the roasting. I allow 2 hours and have the oven at a very low temperature as to keep the nutrient level of the tomatoes in tact. If you do not have garden tomatoes in your backyard, head to your local grocer and purchase a few before the season ends. I serve this clean, healthy dish over brown rice pasta or quinoa. Enjoy!
Healthy Roasted Tomatoes
4 cups fresh tomatoes – chopped – choose several different colors and varieties
3 medium cloves fresh garlic – chopped
1 1/2 tsp italian herbs
1 tsp sea salt
extra virgin olive oil to coat – approximately 1/4 cup
Preheat oven to 200. In a large bowl combine all ingredients. Ensure you use enough olive oil to get the tomatoes nicely coated. Roast in the oven for atleast 2 hours.
