Stuffed Grape Leaves

Once a week my family enjoys having healthy Mediterranean night.  We make a big production of this fun meal and everyone gets involved.  We have homemade bread, yummy cheeses(goat), hummus, olives, grape leaves and lots of olive oil.  I am a firm believer in this way of eating and make a large effort to incorporate it into our weekly meal planning.  Much research has proven the health benefits of eating a Mediterranean diet, and includes protection against heart disease, diabetes, cancer and weight loss.  According to http://www.webmd.com/diet/features/benefits-mediterranean-diet, for the past 50 years scientists have studied the eating patterns of the Mediterranean diet, and they continue to find additional health benefits.  One study found that those following a Mediterranean diet had a lower risk of developing type 2 diabetes.  This recipe is very easy and the end result is divine.  Grape leaves are packed with essential vitamins, iron, fiber and nutrients.  This diet is largely plant based, but sometimes we grill chicken or fish as an addition to our meal.  I hope you plan a family friendly Mediterranean night and enjoy this healthy recipe.

 

Stuffed Grape Leaves

1 jar grape leaves

1 jar roasted red peppers

soft goat cheese – I use brie or feta

olive oil

Preheat oven to 375.  Lay out the number of grape leaves you plan to prepare.  Cut the roasted red peppers lengthwise and lay one strip one each grape leaf.  Add a strip of cheese.  Roll up each grape leaf and place on cookie sheet or roasting pan.  Brush each leaf with olive oil.  Bake for 15 minutes.  Remove grape leaves and brush with oilve oil and bake an additional 10-15 minutes.
