My youngest has been under the weather the past few days and when this happens, I usually resort to craving sweets. So after a sleepless night and a napless day, I am heading into the kitchen to whip up my favorite guilt-free treat. These healthy and nutritious cookies are simple, quick and sure to satisfy your immediate need for chocolate. I read somewhere that when your stress level increases, your desire for chocolate also increases. Maybe that is why you can often find me in the pantry with my hand in the dark chocolate covered almond container! Please understand I do not eat many sweets at all, but am certainly a lover of them. These cookies are packed with fiber and essential omega-3’s, so I don’t worry too much if I have a couple. When you feel like life is absolutely taking over, take a deep breath and make a batch of these delicious cookies. The combination of the two will surely help you stay grounded. Enjoy!
Healthy Dark Chocolate Chip Cookies
1 cup whole grain rolled oats
1 cup sprouted spelt flour
1 tsp aluminum-free baking powder
1 tsp sea salt
1 TBSP ground flaxseed
1/2 cup pure maple syrup
1/4 cup extra virgin coconut oil
1 tsp vanilla extract
1/2 cup dark chocolate chips
Preheat oven to 350. In a large mixing bowl add the dry ingredients, except the chocolate chips and stir until well incorporated. In a small mixing bowl add the wet ingredients and stir. Combine the wet ingredients into the dry ingredients and combine until well incorporated. Fold in the chocolate chips. Cover your cookie sheet with parchment paper. Scoop dough and form into equal size balls and place them on the prepared cookie sheet. Using a small bowl of water and a flat bottom glass, dip the bottom of the glass in the water and press each cookie. Bake for 11-12 minutes or until golden brown. Enjoy!
