My crazy love for healthy fresh cherries began in the summer of 1992 when my then boyfriend, now husband, and I toured Europe. We were dirt poor and I really wasn’t very open to trying new European cuisine, at the time. So, every week in the small town of Pordenone Italy, I bought fresh cherries, bread and cheese at the local market. I would buy enough to last us through the week as we traveled, by train, to visit and tour other areas. Little did I know that 21 years later I would have the opportunity to share this wonderful memory with all of you.
I was inspired to formulate my own cherry salad when I saw a similar recipe on one of my very favorite blogs, www.101cookbooks.com. If you have the chance, please visit this very beautiful website. I, originally made my cherry salad savory using balsamic vinegar and olive oil. For me, this had a very nice taste, but most people who taste tested, preferred the sweet version. So, I took this version and added it to my healthy recipe collection. Cherries have a very sweet and tart flavor, and are truly one-of-a-kind when it comes to fruit. Cherries are a rich source of antioxidants and they can increase melatonin levels in the blood, which can improve your sleep. I recommend eating healthy, fresh cherries during the summer months when they are abundant. Enjoy!
Fresh Cherry & Red Raspberry Salad
2 cups fresh organic cherries, pitted
1 cup fresh organic raspberries
1 TBSP pomegranate juice
1 TBSP orange juice
1/2 TBSP fresh lime juice
2 tsp raw local honey
dash ground cinnamon
This recipe is messy with the cherries, so have paper towels ready. Pit and chop cherries. In a medium bowl, place all ingredients and gently stir to combine. Do not overwork the salad as the raspberries will begin to fall apart.
