I have friends and family that follow the ever popular paleo diet. When they would talk to me about what they were eating, I realized that paleo eating and clean eating are very similar. I do not follow paleo 100%, but I do believe in many of the foundational ideas. I try to limit my grain intake to once per day and that is usually breakfast. If you choose a paleo lifestyle, this is what it looks like: higher protein intake, lots of fresh fruits and vegetables, nuts and seeds with the exception of peanuts, and good healthy fats. No cereal grains, legumes, or anything processed. The idea is to go back to the “hunter-gatherer” mentality. I purchased the cookbook Practical Paleo by Diane Sanfilippo and use it often. I posted a picture of this pizza crust a few weeks ago and got several requests for the recipe. I researched several different ways to make a paleo approved crust until finally settling on this one. I hope you enjoy this healthy, nutritious alternative to grain crust.
Paleo Pizza Crust
1 cup grated goat gouda
1 free-range egg
1 TBSP ground flaxseed
1 TBSP coconut flour
1/8 tsp baking soda
Preheat oven to highest possible temperature. In a large bowl, mix all the ingredients together. Line a cookie sheet with parchment paper and spread the cheese mixture thinly onto the paper. I usually shape it as round as possible. Bake the crust for about 10-15 minutes. Remove, add topping and place back into the oven for another few minutes. Basically, you just want your cheese on top to melt nicely.
