Oatmeal Muffins

Wow, this week of recipe testing on this healthy little muffin has been a doozie, but third time is the charm, right? I couldn’t get the level of sweetness correct to fully please this household. Finally, as I was grabbing ingredients for one last try, my eyes fell upon a jar of unsweetened applesauce in the pantry. That was it…problem solved! This nutritious breakfast/snack muffin is loaded with clean healthy fiber, as well as healthy fats from coconut oil and flaxseed. I tested these on friends, and most importantly my kids and they were a hit. I hope your family enjoys them as much as ours.


Healthy Oatmeal Muffins

1 cup sprouted spelt flour

1 cup whole rolled oats(not quick cook)

1 TBSP ground flaxseed

1 tsp chia seeds

1 tsp baking soda

1/4 tsp salt

1/2 tsp ground cinnamon

1/2 cup coconut oil – melted

1/4 cup pure maple syrup

1/4 cup organic unsweetened applesauce

1 tsp pure vanilla extract

Preheat oven to 350.  Line your muffin tin with paper liners(9).  In a large bowl combine all dry ingredients.  In a smaller bowl combine all wet ingredients.  Pour the wet ingredients into the dry ingredients and mix until well incorporated.  Spoon the mixture into the prepared muffin tin and fill each to about 3/4 full.  This recipe makes 9 muffins, so you will probably have a few slots open.  Bake for 17 minutes or until golden on top.  Leave them in the tin for about 5 minutes and then move them to a cooling rack to cool completely.
