Sometimes I just need something sweet! Perhaps you feel the same way?? I have found that this little blissful cookie does the trick. They are very simple cookies and super easy to make. I think that is why I love them so much. I can, on a whim, decide I want a cookie and have these cooling on the bakers rack in less than 30 minutes. Perfect for a last minute dessert idea if you are entertaining guests. And this is my health disclaimer…Please don’t eat them all in one sitting. Moderation….
Almond Butter & Chocolate Chip Cookies
2 cups sprouted spelt flour
1 TBSP aluminum-free baking powder
1 TBSP ground flaxseed
1/2 tsp sea salt
3/4 cup pure maple syrup
1 cup almond butter
1/2 cup dark chocolate chips
Preheat oven to 350. Cover your baking sheet with parchment paper. In a large bowl, combine all dry ingredients. In a smaller bowl, combine maple syrup and almond butter until well incorporated. Combine wet and dry ingredients and mix well. Fold in the dark chocolate chips. Scoop dough and form into equal size balls and place on the prepared baking sheet. Using a small bowl of water, dip a fork into the water and make indentations into each cookie. Bake for 12 minutes. Do not overcook these cookies. They are best when they are soft.
